Surfin' Organic Safari
You might expect "safari cuisine" to feature bland dishes cooked to a crisp around a campfire, but that's the antithesis of what you'll eat if your wilderness trek is based at Baghvan Pench Jungle Lodge. This luxe safari accomodation — located in tiger-centric Madhya Pradesh in Central India — has always offered tasty (and spicy!) local dishes ... and now, thanks to a brand new eco-friendly initiative, most of what's served is organic too.
The property recently set up a vast organic vegetable garden that's responsible for the bulk of its produce. Thanks to warm and sunny weather for most of the year, it can grow a wide range of delicious fruits and veggies, including spinach, tomatoes, bananas, oranges, lemons, celery, and the bright-tasting coriander that's an essential component of many traditional Indian dishes. And if you like those dishes, the Lodge chefs will show you how they're prepared and also take you for a stroll in the garden ... as long as you promise to leave the tigers in the huge animal reserve next door instead of bringing one along as a ferocious, plus-sized plus one.
The garden's more than just organic, by the way. Baghvan's waste water and compost is used to feed and fertilize the plants, to minimize waste and consumption.
But when the organic roasted vegetables and homemade mint chutney's dished out, we encourage you to consume as much as you'd like.
